Mango Panna

Ingredients:-
:: 1 & 1/2 cup raw mangoes (peeled and chopped)
:: 1 cup sugar
:: 1 tsp roasted cumin (jeera) pd
:: 1/2 tsp rock salt (black salt)
:: 2 cups water
:: 1 tsp fresh mint (chopped finely)

Method:-

1. Place chopped mangoes and water in a cicrowave safe bowl and
microwave at 100% power for 5-6 min.

2. Add sugar, black salt, roasted jeera powder and chopped mint.
Microwave coverd at 80% for 5-6 min. Allow to stand for 5 min.

3. Blend in a blender to make a puree and strain it. Store in air
tight bottles.

4. Mix 1/4 glass of this mixture with 3/4 glass of chilled water at
the time of serving.

5. Garnish with fresh mint leaves.

Chicken Sweet Corn Soup

Ingredients:-

:: 1 can sweet corn (cream style)
:: 1 cup water
:: 3 cup chicken stock
:: 1/2 cup shredded chicken
:: 2 tbsp cornflour (mix in 1/2 cup water)
:: salt & pepper (to taste)

Method:-
1. In a microwave safe bowl add chicken stock and shredded chicken
and cicrowave at 100% for 5-6 min. Keep it aside.

2. In another microwave safe dish add sweet corn and 1 cup water.
Microwave (covered) at 100% power for 5-6 min.

3. Mix together microwaved chicken and sweet corn with stock. Add
salt, pepper to taste.

4. Mix cornflour with 1/2 cup cold water and add to the chicken and
corn and cicrowave (covered) at 80% for 5-6 min. Stir in between.
Stand for 2 min. Serve hot.

Creamy Mushroom Soup


Ingredients:-

:: 100 gm mushrooms (sliced)
:: 1 cup toned milk
:: 4 cups water/stock
:: 2 tbsp cornflour (in 1/2 cup of water)
:: 1 tbsp chopped onion
:: 1 tsp chopped garlic
:: 1 bay leaf
:: 4 pepper corns
:: 2 tbsp butter
:: 1 tsp chopped coriander
:: salt, pepper (to taste)

Method:-
1. In a microwave safe bowl add butter, chopped onion, garlic, bay
leaf, pepper corn, salt, pepper and microwave at 100% for 2-3 min.

2. Add water, cornflour to it and microwave at 100% for 7-8 min.
Stirring in between.

3. Strain it and add milk, sliced mushrooms, salt, pepper and
microwave covered for 3-4 min. at 100% power.

4. Dot with fresh cream before serving. Garnish with chopped
coriander.

Punjabi Dal Tadka


Ingredients:-

:: 1 cup split black gram dal (urad dal)
:: 1 large onion (chopped)
:: 1 small ginger (chopped)
:: 3-4 garlic flakes (chopped)
:: 2-3 green chillies (chopped)
:: 1 tsp ghee
:: 1 tsp cumin seeds (jeera)
:: 1/2 tsp coriander pd (dhania pd)
:: 1/4 tsp garam masala pd
:: 1 tsp turmeric pd (haldi)
:: 1 tbsp lemon juice
:: 2 tbsp lemon juice
:: 2 cups water
:: salt, pepper, red chilli pd (to taste)

Method:-
1. Wash and soak dal for 10 min in water and then drain water.

2. In a microwave safe bowl (glass bowl) add ghee and all the spices
and microwave for 2 min. at 100% power.

3. Add chopped onion, ginger, garlic, chillies and microwave for 3-4
min. at 100% power.

4. Add soaked dal and 2 cups water to it. Microwave (covered) for 10-
12 min. at 100% power and then at 60% power for 8-10 min. Stir in
between.

5. Allow to stand for 5 min. with green coriander and lemon juice.
Serve hot with roti/parantha.

Microwave Chocolate Cake


Ingredients:-
:: 1 cup flour
:: 3/4 cup sugar
:: 1/2 cup curd
:: 1/2 cup butter/malai
:: 1 tsp baking pd
:: 1/4tsp soda-bi-carbonate
:: 4-5 tbsp milk
:: 3 tbsp coco pd

Method:-
1. Grease a microwave safe round cake dish.

2. Sieve flour, coco powder, soda-bi-carbonate and baking powder in a
bowl.

3. Beat curd, butter and sugar, till fluffy and creamy. Mix sieved
flour mixture with the beaten sugar mixture. Add milk and mix it
gradually.

4. Pour cake batter in the greased microwave safe cake dish.
Microwave for 7-8 min. at 60% power. Then microwave at 100% for 1 min.

5. Cool for 10 min. Garnish with your favourite icing.

Tips:-
1. Do not cover while microwaving a cake.

2. Always fill the cake dish to 3/4 to allow space for cake to rise.

3. The microwaved cake may appear wet and undone when removed from
the microwave. Allow to stand for 5 min. It will turn dry on
standing.

Mexican Hot Chocolate


Calories: 135 per serving
Serves: 3 cups
Time: 10 min

Ingredients:-

:: 1/2 cup chocolate pieces
:: 1/2 cup water
:: 1 tbsp instant coffee
:: 1/2 tsp vanilla flavour
:: 1/4 tsp ground cinnamon
:: 2/12 cups milk
:: sugar (optional)

Method:-

1. In a big microwave safe deep dish, add chocolate, coffee, 1/2 cup
water and microwae at 100% power for 4-5 min. Stir in between.

2. Add rest of the ingredients. Stir it throughly. Microwave at 80%
power for 6-7 min. Stir in between.

3. Add sugar as desired.

4. Serve hot.

Spicy Apple Nog


Ingredients:-
:: 2 eggs (separated white and yellow)
:: 1/4 cup sugar
:: a pinch of ground nutmeg
:: a pinch of ground cinnamon
:: 3/4 cup of apple juice
:: 3 cups toned milk
:: 1/2 cups beaten cream

Method:-

1. Separate egg whites and yellow.

2. Place egg yellows in a microwave safe bowl and beat it.

3. Add sugar, cinnamon, nutmeg and apple juice to it and mix it. Also
stir in milk and microwave at 50% power for 5-6 min. Stir in between.

4. Beat egg whites separately. Add these beaten egg whites to the
microwaved milk egg mixtgure. Stir it with the beater.

5. Top each serving with whipped cream & ground nutmeg and cinnamon.

Japanese Punch

Ingredients:-

:: 2 cups water
:: 1 tsp tea leaves
:: 4 cloves
:: 1 cinnamon stick
:: 1'' ginger piece
:: 1 tsp green mint (chopped)
:: 4 cups lemonade (squash)

Method:-

1. In big microwave safe bowl add all ingredients (except lemonade)
and microwave for 5-6 min. at 100% power level.

2. When cool, strain the tea and add lemonade to it.

3. Serve chilled.

Sweet Sour Sauce


Calories: 260 per serving

Ingredients:-

:: 1 can pineapple chunks with liquid
:: 1 1/2 tsp cornflour
:: 2 tbsp brown sugar
:: 2 tbsp vinegar
:: 1 tbsp soya sauce
:: 1/2 green pepper (finely chopped)

Method:-

1. Separate the pineapple chunks and juice from the can. Collect the
juice in a small microwave safe bowl.

2. Add cornflour, brown sugar, vinegar and soya sauce to it. Mix it
and microwave on 80% power for 3-4 min. Stir in between.

3. Add chopped green pepper and pineapple chunks and again microwave
at 80% power level for another 3-4 min. Stirring in between.

4. Can be served over fish fingers, cutlets or any others snacks.

Green Chilli Pickle


Calories: 170 per serving

Ingredients:-

:: 250 gm green chillies
:: 1 tbsp oil
:: 1/2 tsp aniseed (crushed) (saunf)
:: 1/2 tsp fenugreek seeds (methi dana) (crushed)
:: 1 tsp red chilli pd
:: 1/2 tsp turmeric pd (haldi)
:: 2 tsp tamarind paste (imli paste)
:: salt (to taste)

Method:-

1. Wash and wipe dry green chillies and slit them.

2. Put oil and all dry spicesand microwave at 100% power for 2-3 min.
Stir in between.

3. Add slit chillies and tararind paste and microwave for 3-4 min. at
80% power. Stir in between.

4. Serve with any indian meal.

Gujarati Khandvi


Calories: 50 per serving

Ingredients:-

:: 1 cup curd
:: 1 cup water
:: 1/2 cup gram flour (besan)
:: 3/4 tsp turmeric pd (haldi)
:: 1 tsp chilli-ginger paste
:: salt (to taste)

For Tempering:-
:: 1 tbsp oil
:: 1 tsp mustard seeds
:: 2 green chillies (chopped)

For Garnishing:-
:: chopped coriander leaves (green dhania)
:: fresh grated coconut

Method:-
For Khandvi

1. Beat curd, water and gram flour to maek a smooth batter. Place the
mixture in microwave safe bowl and microwave at 80% power for 4-5
min. Stir in between.

2. Mix salt, turmeric powder, chilli-ginger paste and microwave at
80% power for 5-6 min. or till it thickens. Stir in between. When
this mixture thickens spread it as a thin film on a thick polythene
sheet with the help of a flat-bottom bowl. Allow to cool and cut out
1''x4'' broad strips. Roll the strips and arrange on the serving dish.

For Tempering:-

3. To prepare tempering put oil in a microwave safe dish. Add
mustard, seeds, green chillies and microwave at 100% power for 2-3
min.

4. Sprinkle this tempering on khandvi. Garnish it with coriander
leaves and grated coconut. Serve with chuteny.

Chees Balls


Calories : 390 per serving

Ingredients-

:: 75 gm cream cheese (softened)
:: 3 cups grated cheddar cheese
:: 1/2 cup plain flour (maida)
:: 1 tbsp choopped onion
:: 1 egg (beaten)

:: 1 tsp tomato sauce
:: 1 tsp chopped coriander
:: 2 tbsp finely chopped nuts ( peanuts, walnuts)

Method:-

1. In a microwave safe bowl mix together all ingredients (except
chopped nuts) and microwave on 50% power for 4-5 min. Stir in between.

2. Take it out and beat with an electric beater until smooth.

3. Shape into small balls and roll it in chopped nuts.

4. Microwave at 50% power for 3-4 min. just before serving.

5. Relish with sauce / chutney.

Navratan Korma

Ingredients:-

:: 1 cup peas
:: 1 cup cauliflower (chopped)
:: 50 gm beans (chopped)
:: 100 gm potato (chopped)
:: 1 tbsp desi ghee
:: 1 cup khoya (crumbled/mashred)
:: 2 tbsp onion-chilli-garlic paste
:: 1 cup tamato puree
:: 2 tbsp cashewnut paste
:: 1/2 tsp red chilli pd
:: 1/2 tsp garam masala pd
:: 5-6 cashewnuts (to garnish)
:: salt, pepper (to taste)

Method:-

1. In a microwave safe bowl add ghee, onion chilli paste, tomato
puree and all dry masalas and microwave covered for 6-7 min. at 100%
power.

2. Add all vegetable (chopped) to it and 1/2 cup water microwave
covered for 7-8 min. at 100% power. Stir in between.

3. Now add mashed khoya, cashewnut paste and 1/2 cup water mix it
gently and microwave covered for 4-5 min. at 80% power. Standing time
5 min. is given before serving.

4. Garnish with cashewnuts. Serve hot with naan/paratha.

Idli and Sambar


Calories : 40 per serving

Ingredients:-

For Idli:-

:: 1/2 cup semolina (rawa/suji)
:: 1/2 cup curd
:: 1/2 cup water
:: 1 tsp fruit salt
:: 1/4 tsp soda-bi-carbonate
:: 5-6 curry leaves
:: 1 tbsp roasted cashewnuts
:: 2-3 dry red chillies
:: 1 tsp mustard seeds
:: salt (to taste)

For Sambar:-

Ingredients for Dal:-
:: 1/2 cup arhar dal (toor dal)
:: 2 onions (chopped)
:: 100 gm cauliflower
:: 2 brinjals (chopped)
:: 1 cup pumpkin (chopped)
:: 1 drum stick (swanjne ki phali) (cut into pieces)
:: 2 tomatoes (chopped)

For Tempering:-

:: 2 tbsp tamarind paste (imli)
:: 1 tsp chilli pd
:: 1 tsp turmeric pd (haldi)
:: 2 tsp oil
:: 1 tsp mustard seed
:: 6-7 curry leaves
:: 3-4 dry red chilli
:: 2 tbsp sambar pd
:: a pinch of asafoetida (heeng)
:: salt (to taste)
:: 6 cups of water

Method for Idli:-

1. Mix all the above ingredients together to make a thick batter.
Pour in greased microwave safe idli moulds and microwave (covered) at
60% power for 5-6 min. Serve with coconut chutney and sambar.

Method For Sambar:-

2. Wash and soak dal for 15-20min. Add 6 cups of water, soaked dal
salt and turmeric powder. Microwave in a microwave safe bowl at 100%
power for 10-12 min. Standing time of 5 min. is given.

3. in a microwave safe bowl add oil, mustard seeds, curry leaves, red
chillies, asafoetida and chopped onions. Microwave at 100% power for
3 min. Add chopped vegetables and 1 cup water. Microwave (covered) at
100% power for 7-8 min. Mix these cooked vegetables with the cooked
dal.

4. All sambar powder and tamarind paste. Microwave covered at 80%
power for 5 min. Allow to stand for 5 min. Serve hot with dosa, idli,
vada or boiled rice.

Egg Salad Sandwich


Calories : 240 per serving

Ingredients:-

:: 4 hard cooked eggs (chopped)
:: 1 boiled potato (chopped)
:: 1 tbsp chopped onion
:: 1 tbsp chopped tomato
:: 1 tbsp chopped coriander

:: 1 tbsp tomato sauce
:: salt, pepper (to taste)
:: 4 toasted bread or buns

Method:-

napkin and microwave on 80% for 1-2 min. or until heated through.

3. Relish the sandwiches with sauce/salsa.

Pao Bhaji

:: 2 carrots (chopped)
:: 1/2 bottle gourd (chopped) (ghia)
:: 1 small cauliflower (chopped)
:: 1/2 cabbage (chopped)

:: 2 potatoes (chopped)
:: 3 tbsp onion-garlic paste
:: 3 tbsp tomato puree
:: 2 tsp ghee/oil
:: 2 tsp pao bhaji masala
:: 1/4 tsp gram masala
:: 4 buns (pao)
:: 2 tsp butter
:: salt and red chilli pd (to taste)
:: green coriander and onion rings (to garnish)
:: 1/2 cup boiled peas (to granish)

Method:-

1. In a microwave safe bowl add all chopped vegetable with 1/2 cup
water. Microwave (covered) at 100% power for 9-10 min. (till tender).

2. Allow to stand for 5 min. Blend in a blender. Add oil, onion-
garlic paste in a microwave safe dish and microwave for 3 min. at
100% power. Stir in between.

3. Add tomato puree, salt, dry masalas and microwave for 4 min. at
100% power. Mix blended vegetables to it and microwave (covered) for
3-4 min. at 80% power. Keep covered.

4. Take buns and slit in between. Rub a littel butter on both sides,
place them on tissue paper and microwave for 3 min. at 50% power.
Garnish bhaji with green peas, coriander and serve hot.

Thai Fish Curry


Calories : 150 per serving

Ingredients:-

:: 4 pcs. of full fish or cut into pieces (500 gm approx.)
:: 2 tbs tamarind paste
:: 2 tbs oil
:: 2 tbs onion-garlic paste
:: 2 tbs lemongrass (chopped)
:: 2-3 dry red chillies (soaked in water and minced)
:: 1 tsp mustard sauce
:: 1 tsp soya sauce
:: 1 tbsp brown sugar
:: 1 tsp white sugar
:: 1/2 cup water
:: salt, pepper (to taste)

Method:-

1. In a microwave safe bowl, add oil, onion-garlic paste, soaked red
chillies paste, lemon grass and microwave covered at 100% power for 5-
6 min.

2. Add fish, sustard and soya sauce, tamarind paste, brown and white
sugar, water, salt etc and microwave covered at 80% for 506 min. Stir
in between. Allow to stand for 5 min.

3. Serve hot with rice.

Khaman Dhokla


Calories : 50 per serving

Ingredients for Dhokla:-

:: 1/2 cup curd
:: 1/2 cup water
:: 1/2 cup gram flour (besan)
:: 1/2 tsp soda-bi-carbonate
:: 1/2 tsp haldi pd
:: a pinch of sugar
:: 1 tbsp lemon juice
:: 1 tsp fruit salt
:: salt and green chilli (to taste)
:: 1/2 cup water

For Tempering:

:: 1 tsp Oil
:: 1 tsp mustard seeds
:: 1 bunch of coriander leaves (chopped)
:: 7-8 green chillies (slit)
:: 4-5 curry leaves

Method:-

For Dhokla:-

1. Grease a microwave safe flat dish little oil.

2. Beat all the ingredients of dhokla together. Pour the mixture into
the greased dish.

3. Microwave (covered) at 80% power for 5-6 min.

4. When ready, pour 1/2 cup water on dhokla and cover it.

For Tempering:-

5. In a microwave safe bowl microwave oil and all the ingredients
(except green coriander) and microwave for 2-3 min.

6. Spread the tempering evenly on Dhokla and cut it into pieces.

7. Garnish with chopped coriander. Serve with chutney.

Masala Aloo Bhaji

Ingredients:-

:: 1/2 kg potatoes (cut into small pieces)
:: 1/2 tsp jeera
:: 1/2 tsp coriander pd
:: 1 tsp fennel seeds pd

:: a pinch of asafoetida (hing)
:: 1/2 tsp gram masala pd

Method:-

1.In a microwave safe bowl add oil and heat at 100% for 1 min.

2. Add all dry masalas, salt, etc and microwave covered at 80% for 2-
3 min. Stir in between.

3. Add chopped potatoes and water and mix it well. Microwave covered
at 100% for 8-10 min. Stir in between. Standing time of 5 min. to be
given before serving.

4. Serve hot with poori.

Shahi Chicken Biryani

Calories : 350 per serving

Ingredients:-

:: 1 1/2 cup basmati rice (soaked for 1/2 hr.)
:: 3 tbsp oil
:: 1 cup sliced onions

Dry Spices:-

:: 5 cloves
:: 5 black cardamoms
:: 2 cinnamon sticks
:: 3-4 green chillies
:: 1 tsp salt
:: 1 tsp haldi pd
:: 2 bay leaves
:: 1 tsp garam masala pd
:: 1 tsp coriander pd

Marinade:-

:: 500 gm chicken
:: 2 cups curd thick
:: 2 tbsp lemon juice
:: 2 tbsp ginger garlic paste
:: 1 tsp red chilli pd

For garnish:-

:: 1 tbsp mint leaves
:: 2 tbsp coriander leaves

Method:-

1. In a microwave safe bowl add oil, sliced onions and all dry spices
and microwave at 100% power for 5 min.

2. Marinate the chicken pieces in the above marinade for 1 hr. in the
refrigerator. Add this marinated chicken in the cooked onion spice
mixture. Mix well and microwave covered on 100% power for 6-7 min.

3. Now add soaked rice to it, 3 cups of water and microwave covered
at 80% power for 12-15 min. Standing time of 5-6 min is given.

4. Garnish with chopped mint and coriander leaves. Serve with raita
and chutney.

Sindhi Kadi

:: 2 tbsp oil
:: 1/2 tsp fenugreek seeds
:: 1 tsp cumin seeds

:: 1 tbsp chilli pd
:: salt, pepper (to taste)

Vegetables:-

:: 2 potatoes
:: 2 tomatoes (chopped)
:: 2-3 green chillies (chopped)
:: 2 tbsp tamarind paste(imli)
:: 1 tsp red chilli
:: 100 gm french beans (chopped)
:: 100 gm lady finger (chopped)
:: 100 gm cauliflower (chopped)
:: 100 gm brinjals (chopped)
:: 100 gm pumpkin (chopped)

Method:-

1. In a microwave safe dish add oil, fenugreek seeds, cumin seeds and
gram flour and microwave at 100% power for 2-3 min.

2. To this add 3 cups water and sour curd. Mix it well and microwave
at 100% power for 4-5 min.

3. Add all chopped vegetables into it and mix it. Microwave covered
at 100% power for 9-10 min.

4. When vegetables are tender, add tamarind paste and all dry spices
mix it thoroughly and microwave covered for 5 min. at 80% power. Give
standing time of 5 min.

5. Serve hot with rice.

Bangali Bhapa Mach

Calories : 150 par serving

Ingredients:-
:: 500 gm of fish (Hilsa) (cut into pieces)

For Marinade :-
:: 3 tbsp mustard paste
:: 3-4 green chillies
:: 1 tsp red chilli pd
:: 1 & 1/2 tsp turmeric pd
:: 2 tsp oil
:: salt, pepper (to taste)

Method:-

1. Mix all ingredients of marinade. (except oil and green chilli) Put
fish into this mixture for 1/2 and hour.

2. In a microwave safe bowl add oil, and green chillies and microwave
for 1 min. at 100% power.

3. Now add marinated fish into it and microwave (covered) at 80%
power for 6-7 min.

4. Serve hot with boiled rice.
