Gujarati Khandvi


Calories: 50 per serving
Serves: 10 - 12

Ingredients:-

:: 1 cup curd
:: 1 cup water
:: 1/2 cup gram flour (besan)
:: 3/4 tsp turmeric pd (haldi)
:: 1 tsp chilli-ginger paste
:: salt (to taste)

For Tempering:-
:: 1 tbsp oil
:: 1 tsp mustard seeds
:: 2 green chillies (chopped)

For Garnishing:-
:: chopped coriander leaves (green dhania)
:: fresh grated coconut

Method:-
For Khandvi

1. Beat curd, water and gram flour to maek a smooth batter. Place the
mixture in microwave safe bowl and microwave at 80% power for 4-5
min. Stir in between.

2. Mix salt, turmeric powder, chilli-ginger paste and microwave at
80% power for 5-6 min. or till it thickens. Stir in between. When
this mixture thickens spread it as a thin film on a thick polythene
sheet with the help of a flat-bottom bowl. Allow to cool and cut out
1''x4'' broad strips. Roll the strips and arrange on the serving dish.

For Tempering:-

3. To prepare tempering put oil in a microwave safe dish. Add
mustard, seeds, green chillies and microwave at 100% power for 2-3
min.

4. Sprinkle this tempering on khandvi. Garnish it with coriander
leaves and grated coconut. Serve with chuteny.
